I use to be a short order fry cook at a little drive in up in Madera CA. I had to prep and cook the french fries. I put them through the veggie chopper, put them in a peeler too. Pre fried them and then stored them in a walk in refrigerator. Then fried them the rest of the way. Not difficult, just a lengthy procedure!

I was in the Fry business for 25 Guys fries are ok, consistent especially for folks that know how to do them oil must be continuously rotated and fryers cleaned Guys problem, fries are not their specialty, burgers are so thats their focus, in addition 5 Guys are also at the mercy of the market, with the new crop, the old crop and the fact that all potatoes due to their starch and sugar content cook differently, therefore you must adjust for

I'm assuming they use a vinegar water for their boil. Otherwise without the acid present the pectin structure in the potatoes breaks down in the boiling and they fall apart like boiled potatoes.

The first time I had FIVE GUYS fries, it was a very new experience for me. Before then, I did not know what Boardwalk style fries were, as there are no other places that I am aware of in Texas that offer this style of french fries. That mashed potato like inside, and yet a firm outside, makes Boardwalk style French fries. I have come to like Boardwalk style fries better than traditional crispy fries. Try putting a splash of malt vinegar sauce into a 2 ounce side cup at the condiments bar, then fill it halfway full with ketchup. Use a fry to stir it up to well incorporate the malt vinegar. Makes a great ketchup enhancer, and a great fry dip!

So after they cut the potatoes to fries, they boil them in hot water for 3 minutes, fry them, then boil them again? Then fry them a second time before serving them? Wow.

I prefer Penn Station fries. They have more crispie crunchies. They are the small bits of the potato that aren't the full sticks, especially bits of skin.
