Also most of the companies have very vague idea of the processes they use daily. Sometimes due to mass layoffs, sometimes due to companies merges, sometimes due to using 3rd party tools or vendor company to run mentioned process

This video scientifically misrepresents many facts... First and foremost >> BPM stands for Business Process Management NOT Modeling. Within BPM life-cycle process discovery and modeling is one of the phases. We do design process models by hands which are reulted from interview-based process discovery approaches that lead to modeling processes by hands. We do also use PROCESS MINING for evidence-based process discovery, which is not completely related to data mining (the event logs are specific and different). For more information please read the BPM book written by Prof. Dumas.
