I have a lot of anxiety in my life at the moment and your videos are calming to me. I watch them most nights and I even started noticing some of the shop's regulars after almost a year of watching your cafe vlogs. So, thank you for providing a calming space I can return to when I'm anxious.

Watched this video for an anthropology assignment on observing human behavior, and figured I might as well post them in the comments as well;

[0:00:00]On the left, you have two men. One seems split between focusing on their conversation and their order, frequently glancing back at the barista, while the other faces directly away from the counter the entire time. The fidgety one even moves so they have a better view of the counter while talking with their brother. I assume this connection due to how similar the two look, though it’s possible that they’re merely friends.
[CONCLUSIONS]: From these behaviors, one can assume Grey Shirt’s personality to be more carefree than White Shirt’s

[0:04:25]I observe these same two having a rather animated discussion at the cafe tables on the left.
[CONCLUSIONS]: A shake of their head followed by a large gesticulation where they spread their arms out implies they were denying or refuting something, then making further movements that suggest they explained their stance further. Their counterpart offered far less context clues however, seeming almost unimpressed.

[0:06:11]A woman who has a heightened degree of familiarity and general jovialness with the barista and their co-workers appears, engaging first with a glasses-wearing female cafe employee on the right before taking an order and/or speaking with the woman at the front counter, and finally having a long conversation with the man with the mustache behind the counter, lasting until
[0:08:21] when their order is finished.
[CONCLUSIONS]: Exhibited are obvious signs of some relationship, but the word “Friday” is mentioned when talking with the man, implying they’re either talking about a prior event or planning a future one.

[0:12:50]Interestingly, up until this point I failed to recognize this fourth employee now on the left at customer side of the counter, dubbed Grey Stripe-Shirt, as they generally managed to stay unnoticed in the crowds, serving a more generalist role that moved stock and served people. Looking back, he appeared as early as [0:02:10], bringing in boxes and a purse. Moustache Man greeting them upon entry and the barista at the counter even saying ‘good morning’ as well without turning around to look at them due to being busy with a customer.
[CONCLUSIONS]: Generally strikes me as the type who prefers little social interaction, working in the background instead of as a frontend employee. It takes one to know one, after all. Their coworkers seem happy to oblige these tendencies, which additionally suggests he’s a reasonably good worker.

[0:21:19]A man with a scooter pulls in after leaving it sitting outside, dressed with a helmet and dufflebag. They speak very little with the employees there, ordering quickly and leaving as soon as their coffee is done.
[CONCLUSIONS]: Leaving aside their confidence in the safety of the neighborhood that their scooter wouldn’t get stolen in the time they spend inside, the man seems to have been in a rote hurry, being punctual for the entirety of their short sojourn at the cafe. Likely on their way to a job or function.

[0:23:56]A man in a white collared shirt and wearing a backpack comes in to order a coffee. They outwardly appear as though they’re in less of a hurry than, say, the scooter user from before, but stand near the counter instead of taking the time offered by their order’s lengthy wait to sit and relax, instead opting to simply plant their feet with a heavy backpack in an awkward position around their right shoulder.
[CONCLUSIONS]: The anxious behavior, backpack, general dress, and age, all implies they’re a college or at least high school student in a hurry. You can even see them at [0:29:08] at the far right windows, walking away from the direction they came from when they first arrived. If they had gone towards where they came from, I might have suggested they were in between classes.

My assignment called for 30 minutes & 500+ words, so alas, I will stop here.

I put this on repeat in my office to feel like I'm working/studying in a coffee shop like I did in graduate school. I'm sure it's easier for you to edit without subtitles, too :) Thank you!

I recently picked up a shift at a cafe in Mossman, Sydney, and their machine was a Synesso! But I think it was an older model. Had 3 portafilters, but the first two had buttons to pull the shot, and the third one was a manual one, where you slid a lever across and you had to keep an eye on it (which I never did because I never used it haha). The steam wand and lever was the same as yours, though. It was a great machine to use <3

This is so sweet of you. It’s a pleasure to watch you and enjoy the ambiance of the cafe.

I have I plastic milk jug hack I need to share with you. Put the stream wand in a empty plastic 2l jig for 10-12 seconds open the steam the whole way, move it up and down (don’t take it out) when the plastic is about hot as properly steamed milk crush it, will stay that way. So the bin won’t fill up as fast with empty jugs.

Thank you again for all the videos

Eric😃

Look at those many customers, I feel my memories back when I was a staff for an convenience store called Family Mart. I was really scared when more and more clients waiting for their turn while I was finishing the bill. I am an introvert person so I chose night shift instead morning or afternoon because I was not good at counting money and face to face to client. I know we both have counter machine but not always has enough pence. As I wasn't good enough at counter position, my partner always told me did the warehouse stuffs such as: fill in drinks on the fridge, do FIFO snack, food, clean the floor, table, toilet, cook hot-pot, etc. But It was such an incredible experience that I had. I am so glad that you can manage to do everything goes perfect. From Vietnam 🇻🇳 with luv 👌. Sorry if my English bad.

One thing ive come to realise is that being a barista is that you really need to have a sense of rhythm when it comes to working the machine with other people during the busy periods. I wouldnt really use 'synergy' or 'clockwork' to describe it. But rhythm in the sense that you can keep the flow while you bounce back and forth from dealing with different tasks while not being too fast or too slow to overwhelm or slow your partner down.
