I am glad that the stores have not chosen to market these as baby portobellos. I think if they did, they would be a good deal more expensive. And you are absolutely correct that the nutrients are made more accessible by cooking. The cell walls in mushrooms are made of chitin, which is the same thing the shells of insects are made of, and cooking makes it so we can digest those cell walls and utilize the nutrients that are inside. Plus, they just taste better sauteed in butter. ;)

Oh, and another thing. When it comes to "button" mushrooms like these, the creminis have so much more mushroom flavor than the white ones. I just will not buy the white ones anymore. Might as well be slicing up pieces of sponge into your food, for all the flavor the white ones have. I would encourage anyone who has not tried these to do so the next time they buy mushrooms. There really is a difference.

Langermannia gigantea - the American Giant Puffball Mushroom is one of the best-known edible wild mushrooms in North America. Most people who are familiar with them are farmers and country folk, not so many people in suburbia are aware of them. They're one of the most easily identifiable wild mushrooms available.
