Oatmeal Caramelitas
2 cups flour
2 cups old fashioned oats
1 ½ cups brown sugar
1 tsp. baking soda
½ tsp. salt
1 cup (2 sticks) unsalted butter, melted
1 cup semi-sweet chocolate chips
1 cup caramel topping
¼ cup flour
Preheat oven to 350 degrees. Combine 2 cups flour, oats, brown sugar, baking soda, salt, and melted butter in a large bowl, then press half to two-thirds of the mixture into a 9 x 13in. pan making sure to press the crust up the sides of the pan. Bake 10 minutes at 350*. Mix the caramel topping with the ¼ cup of flour. Remove bottom layer from the oven. Sprinkle the chocolate chips evenly over the surface. Spread the caramel evenly on top. Crumble the remaining oat mixture over this. Place back in the oven for 15-20 minutes until golden brown. Caramel will be bubbling so don’t eat these right away! Allow to cool completely before cutting into bars and/or storing (you can refrigerate these to speed up the cooling process). These cookies can be frozen to avoid eating the entire pan at once!
