Nonna’s lemon ring biscuit recipe. Perfect for Easter 💛🐰🍋

Recipe 💛
4 eggs, 70g each
250g sugar
500g self raising flour
1 whole lemon, zested
2tbsp lemon juice
125 butter, melted
2tsp baking powder
1tbsp vanilla essence
1tbsp almond extract

Beat 4 eggs. Add lemon zest, lemon juice and mix. Add sugar and mix then add melted butter, vanilla and almond essence, baking powder and mix. Add self raising flour and mix together. Add flour to bench top and put pastry on top then roll into a log. Cut a medium sized piece off and roll into a long rope. Then cut in the middle and place the on top of each other and twist. Cut in the middle then make each twisted rope pieces into a small circle. Bake at 180C for 25-30mins. Once cool, dip in lemon glaze before serving.

Glaze recipe: Mix 1/2 cup icing sugar with the juice of half a lemon.

Just made it and we loved it! ❤ It does raise a lot, so keep a good amount in the middle and don’t put them too close to each other. Next time, I’ll double the lemon juice because my family likes a lot of lemon 🍋
