Chewy almond and orange Italian cookies | Gluten free, no flour

Ricciarelli Italian cookies are soft and chewy. Great cookies to give as gifts or for yourself. Classic Christmas dessert. Melts in your mouth cookie. Almond flour cookies.

300g almond flour, divided
100g confectioner’s sugar (powdered sugar) (¾ cup)
Zest of 1 orange
Juice of 1 orange
15ml honey (1 tablespoon)
1 egg white
2.5 ml (½ teaspoon) almond extract
Confectioner’s sugar
