I’ve been farming for years and one of my favorite easy summer squash dishes is a brown butter pasta with summer squash and pine nuts and goat cheese. I love this recipe because it’s versatile and you can add what you have growing at the moment. I like to add green onion, garlic or garlic scapes, and fresh basil!

I also use harvesting baskets. I just bought a beautiful large one at Goodwill on Friday. I also buy small harvesting baskets because I love to share our bounty with friends and family. The baskets are a beautiful way to present the gift and because the baskets are reasonable at thrift stores i don’t worry about getting them back. Although almost every time i get the basket back with a delicious home cooked goodie inside. Gardening is such a warm, friendly way to share with neighbors. We have a composting bin that even our neighbors are contributing to. I LOVE it! 😮

My grandma would always make a squash stew with squash from our garden. Not quite sure how she made it but I know she chopped up okra, squash, onion, garlic, tomatoes and just stewed them in a pot and then put it over rice with some corn bread on the side. Soooo good and refreshing 😋

Amazing work, you could literally eat from the land, save as you go and build a wide community. A good life :) many kiwi people dream of this lifestyle but for one reason or another aren't quite able to become successful in doing so.
