Thai Cashew Nut Chicken is an addictive combination of spicy and sweet stir fry chicken with roasted cashew nuts. This easy 30-minute dish packs a punch with lemongrass, ginger, garlic, red chilies and onion.
Slightly different from the Chinese Cashew Nut Chicken, the Thai version is fiery and less sauce-y. Chunks of pan-fried chicken and roasted cashew nuts are tossed in a flavourful sauce. So delicious and easy!
Larb (ลาบ) is a Thai salad, but it’s not a vegetable salad, instead it’s a meat salad. The minced pork is wonderfully seasoned with fish sauce, chili flakes, lime juice, toasted sticky rice to give it some crunchy texture, and a wonderful assortment of fresh herbs to bring it all together.
