Le Creuset 4.5 qt. pot (affiliate)

1 chicken breast with bone
1/4 chopped onion
1 handful chopped cilantro
1 cup small diced carrots
1 cup small diced celery
2 bay leaves
3 green onions chopped with green and all
1 1/2 tbsp chili powder
1/2 tsp cumin (ground in molcajete)
1/2 tsp peppercorns (ground in molcajete)
2 big garlic cloves (ground in molcajete
1/8 tsp cayenne pepper
1 cup crushed tomatoes
2 tbsp chicken bouillon (you decide)
1 cup sweet canned corn (drained or not)
Grated cheddar for garnish
Tortilla strips toasted for garnish
Avocado slices for garnish
Add salt if needed
1 big bunch of love.❤
1/2 cup raw long grain rice

I came looking for a really great chicken Tortilla recipe. I couldn't find the canned version that I love so much. What I found, was a nice lady, that makes me feel like I am right there in the kitchen with her, and makes me feel like a sister or a family member that needs some learning in the kitchen. I will be back. Im hooked.

....Y' all, ..can we just say what a wonderful woman this sweet Lady is...
Not only does her Spirit shine through... the way she explains everything....actually TEACHING , and that is also so great, she is a joy to watch . I do make chix tortilla soup, , and as I was watching her make it, , I was thinking...." omgosh, it's divine, divine..., I'm getting hungry watching her..!"

Hello Rachel and Ron. We made 2 very large pots of this soup for the 4th of July.
My grandsons are starting to add more items to your recipes. They wanted black beans, more corn, lots of heat, bell peppers and zucchini. They made sliced corn tortillas to go in the soup.
The soup was a huge hit at our 4th of July neighborhood party.
What I really wanted you and Ron to know is that many of my neighbors come and ask who Rachel is. How do we know you.
They thought you were a wonderful aunt to my grandsons who comes and teaches us to cook good food. We show them your videos on YouTube.

I made your soup tonight, my family really enjoyed it. It's now one of my favorites, too.
My husband and I took some to two homeless men close by our home, they LOVED the soup, the one guy was burning his mouth saying, " this is so good..."

I’m new to your Channel, l’ve only watched about six of your videos... I loved this recipe but more importantly, l admired the way you kept referring to your husband, “My Ron”. I was tearing up watching this, it’s the anniversary of my Husband’s death today. I lost him suddenly to cancer. I never let a day go by in the 38 years we were married without letting him know how much he was loved. So, l hope you and “your Ron” live a long, happy and healthy life.

You seem like such a sweet woman and I love watching your Channel. You’re just so warm and caring. Take care. ☺️

I love your cooking style. But, there is just something so special about how you say "Me and my Ron" or "my Ron." It really shows how much you care about him when you say it and with your cooking. Love your recipes too.

Rachel, I love the way you explain each step. I was a corporate trainer for 30 years and that is the way I taught my students. I also love "the taste test"! I can almost taste the food with you! This soup recipe is one of your best. This is like the 3rd time I've watched it to make sure I get everything just right. I love spending time with you in the kitchen 💕

Years ago, I lived in Redondo Beach, in southern California, where I'm from. My boyfriend, who is from Guadalajara, had his family come visit us for a couple of months. Omgosh, the cooking that went on!! I learned so much from them, and it was the best food I'd ever eaten-ever. Recipes I'd not really had before because most Mexican restaurants back then catered to the American appetite. I will carry the many recipes they taught me over those couple of months. Rachel, you remind me of those time's. You are an excellent teacher, and very sweet. I could hang out with you all day! Thank you for sharing your recipes with us. 🙏❣️ Bless you and your family.

Back in 74, When I was around 12 a Mexican lady that my mother babysit for taught me to make tortilla soup, but she used pork, And no tomatoes or rice With it she served home made tortillas of which she also taught me to make . Both were awsome .haven't made them in years .thanks for the reminder.
