Lowest Hydration Sourdough bread Ever! No more FOLD!!!

Low hydration dough's are way easier to handle , but is it possible to achive a beautiful loaf of sourdough bread with a very low hydration something like 50%!!!

Recipe:
350G flour
170ml Water
7G salt
70G starter

Mix and knead the dough like a normal low hydration bread and let the fermentation do its job at 28c takes 5 hours to ferment then i shape it and let it proof for 45 min , it takes longer than normal bread with medium hydration maybe next time i let it even proof more in order to achieve open crumb

And how can we reach such a great thin crust in such a low hydration? I have always rubbery thick crust in low hydration

I will try this. I tried a 70% hydration and it was tooo much. Caused the bread to overproof.
