Vietnamese Chicken Salad

This fresh, bright Vietnamese Shredded Chicken Salad is bursting with flavour! Make it in minutes using the Expert Prep Pro to shred, slice, and grate all the ingredients in one go.

Serves: 4

Prep Time: 15 minutes

Ingredients:

- 2 chicken breasts, cooked and shredded
- 1 red onion, thinly sliced
- Approx. 300g Chinese leaf or green cabbage, shredded
- 1 cucumber, halved lengthways with the seeds scooped out then thinly sliced
- 2 carrots, grated
- 1 red chilli, deseed and finely chopped
- 1 pack (approx. 20g) mint leaves, hand torn
- 1 pack coriander (approx. 20 grams)
- 50g peanuts, crushed
- Lime wedges, to serve

For the dressing:

- Juice of 1 large lime
- 2tbsp rice vinegar
- 60ml fish sauce
- 60ml vegetable oil
- 1tbsp caster sugar
- 1 garlic clove, minced
- 1 small red chilli, finely diced

Method:

STEP 1 Make the dressing by combining all the ingredients in a small bowl and mixing well. Set aside until serving.

STEP 2 For the salad, prep all the ingredients by shredding, slicing, and grating using the Expert Prep Pro.

STEP 3 Add all the ingredients into a large bowl and mix until well combined.

STEP 4 Pour over the dressing and toss well until everything is incorporated. Let sit for 5 minutes.

STEP 5 Transfer to a large serving dish, then top with peanuts and lime wedges. Dig in!
