Ingredients for 2 people:
For the salmon :
280g skinless salmon
1 ยฝ tablespoons Thai green curry paste
250ml coconut milk
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1-2 tablespoons fish sauce
2 teaspoons sugar (preferably brown)
1 carrot
Juice of half a lime
Thai basil leaves

For the rice :
1 yellow onion
1-2 cloves garlic
1 tablespoon olive oil
1 glass basmati or jasmine rice
2 glasses lukewarm water
ยฝ teaspoon salt

Instructions:
For the green curry sauce: Heat 1 tablespoon olive oil in a wok over medium-low heat. Add the Thai green curry paste and cook for one minute.

Add the coconut milk and leave to simmer. Add the fish sauce, sugar, lemon juice and sliced carrot. Leave to cook for around 10 minutes.
Meanwhile, cut the salmon into cubes and add a tablespoon of olive oil, 1 teaspoon of salt and 1 teaspoon of pepper. Brown the cubes in a frying pan over high heat. After 10 minutes, add your cooked salmon cubes to the sauce and sautรฉ for 5 minutes. Remove the wok from the heat and add your Thai basil leaves.

For the rice: In a saucepan heated to medium-high (4/6), add 1 tablespoon olive oil. Sweat the yellow onion for 3-4 minutes, then add the garlic for a minute. Meanwhile, wash the rice and add it to the pan. For 1 glass of rice, add 2 glasses of water. Don't forget to add the salt.
Once the water is boiling, cover the pan and turn the heat down to low (2/6). Check your rice as it cooks - it should take about 15 minutes.
