Used to work at a Five Guys roughly 6 years ago. The kitchen conditions are nasty. The number of boogers and netherreigion hairs that made it into the cow flesh was astonishing.

I worked at five guys for over two years. You got it almost right, you melt the cheese on the buns and not on the Patty. Think of it as a grilled cheese with a patty. Also they use a thin layer of Mayo on their buns to brown. Rather then the traditional butter. Also they really enthusiasm not smashing buns or patty to much to keep it fluffy and juicy.

Here in south of Brazil we have the famous "cachorro prensado" which is hotdog but pressed like this, even the Cheeseburger here is pressed which is called "X" because sounds like "cheese" (Xis).
