Those Chick pastries are known as “Hiyoko Manju”, and they’re considered a must-buy confectionary souvenir from Fukuoka. I think you found it offputting because you seemed to be expecting soft bread or something really sweet.

Manju is a kind of steamed cake/dumpling, kind of similar to mochi, but made with flour instead of glutinous rice. That’s why it is crumbly, or as you described “stale”. The pastry is filled with a sweet white/red bean paste or sometimes even chestnut. It has a very subtly sweet, rich flavor, and it pairs beautifully with tea.

The "buddha's head" cake has sweetened red bean paste inside. The beans are azuki beans (小豆餡 or あずき in Japanese). It's an afternoon treat best eaten with tea. I really like seaweed flakes on potato chips or French fries but I recognize that it's an acquired taste. Pringles with seaweed, however, just seems like something to avoid though.

The "matcha dumplings" you referred to are actually called "yatsuhashi". They can be made with different flavors like cinnamon and black sesame.

The way he hates the snacks I grew up eating is kinda sad. Your palate are not used to that taste. But to those that grew up tasting sweet red bean paste as a dessert or seaweed chips as a snack, they are amazing snacks. I hope you can try them again when your palate matures more. 😊
