Focus pullers are good at guessing how far away something is, and he'll know how much (for example 5 feet) will be in focus at any time, so he has a plus or minus 2 feet margin of error.
Before the take the focus puller will have measured the distance between the camera and important points of action, and made marks on his focus wheel he can hit in time with the actors.
He's got a small monitor so he can see what's in frame, but the resolution wouldn't be enough to rely on it for critical focus

It remotely controls the focus of the camera - he turns the wheel on the side and it activates a motor attached to the lens

Jeremy was born to do this! It's so funny that the premise of the movie is that Aaron has to be "enhanced" to be able to do this stuff, but normal amazing dude Jeremy Renner can actually do it all!
