The reason the trash pickup guy in Toy Story 3 has the same shirt as Sid did in Toy Story is because that is Sid all grown up. They even had the same voice actor return to reprise his role.

7:49 Pixar went on record saying that the garbage man is Sid himself years later.
8:32 True 95 was the first Pixar film ever released that year but uses the Lightning McQueen style.

You forgot to mention that Lightning McQueen is a reference to Steve McQueen, a racecar enthusiast.

The roman numerals reference in Brave made me yell at my computer because it was so good.

I think you missed one, or maybe I missed it. Finding Nemo when Bruce the shark is chasing Dori and Marlin thru the ship wreck. When he's slamming on the door to try and get it open he says "here's Brucie" reference to The Shining's "here's Jhonnie"
anyway it made me laugh when I first saw it on theaters lol great video btw :)

Good Work finding! But here are more Easter Eggs I found:
Red's Dream:
1. The floor of the circus ring is a Luxo Ball.
Toy Story 1: 1. When the music is playing the little girl's car, the music is "Kumata tama" from Disney's The Lion King. 2. There is a red Luxo Lamp in Andy's room. 3. The rolling globe is a reference to Indiana Jones: Raiders of the Lost Ark.
A Bug's Life: 1. Flik says "To infinity and beyond!" a quote by Buzz Lightyear during the end blooper reel.
Toy Story 2: 1. Buzz Lightyear's breathing noise which is sounded like Darth Vader's breathing noise, Buzz Lightyear's hand is in the hologram which is sounded like a lightsaber, Zurg's gun fire which is the Star Wars gun fire, Zurg says "I am your father" to Buzz Lightyear quote by Darth Vader, and Woody and Jessie swings are a reference to Star Wars. 2. There are Chess Pieces are in the middle drawer. 3. Rex was using the SNES game controller to play the Buzz Lightyear video game. 4. During the end blooper reel when Heimlich and Flik were flying out of the branch, we can hear the Wilhelm Scream.
The Incredibles: 1. Mr. Incredible is meeting Mirage at 2:00 in conference room number A113.
Cars: 1. Lightning McQueen has Lightyear branded tires also the reference to Goodyear Tires. 2. One of Lightning McQueen's Pit crew team says "You quit Mister One Man Show!" is a reference to the Pixar short One Man Band.
3. Chick Hicks has the 86 on him, referencing the year of Pixar's first short film release.
Wall-E: 1. Wall-E's power on sound is just sounded like the iMac start up sound. 2. Wall-E has and iPod that plays the movie Hello Dolly. 3. Mo's scanner voice is actually voiceover from the iMac. Up: 1. When one of the dogs fall into the water, we can hear the dog-ified Wilhelm Scream.
Toy Story 3: 1. Bullseye rolls on a luxo ball was the "o" in the teaser. 2. Woody and the rest of Bonnie's toys use an Apple Computer. 3. The boy is wearing a 95 t-shirt is a reference to Lighting McQueen. 4. In Toy Story 3 The Video Game for Nintendo DS, you have to collect Luxo Balls to earn cool prizes.
Inside Out: 1. John Ratzenburger is the voice of Fritz at the end of the film. 2. There is a board game in Imagination Land called "Find Me" with a picture of Nemo. 3. There's even a dinosaur board game that has a picture of Arlo from The Good Dinosaur. 4. The dinosaur memory has the trisaratops and Arlo form The Good Dinosaur. 5. When Riley enters her new home, the dead rat resembles Remy from Ratittouie(?) not sure if i spelled it correctly. 6. When little Riley chases Bing Bong, we can see the luxo ball. 7. Riley's Parents' car resembles the Pizza Planet Truck. 8. The Blue Animal doll is the same one from Monsters Inc. 9. Riley's phone resembles the Samsung Galaxy. 10. Before Riley plays hockey at the end of the film, they boys cap reads A113.
The Good Dinosaur:
1. John Ratzenbuger does the voice of Earl
Toy Story of Terror:
1. The manager of the hotel stealing the police car is a reference to Grand Theft Auto.
