Borscht is probably pronounce as "borscht" because the Old Church Slavonic pronunciation of the letter щ was "sht". This later mutated to the current "shch" sound. While most slavic languages have changed the pronunciation of the letter щ, I believe that Bulgarian still retains the original phonetic value.

Early. Also my grandparents are ukrainian, my grandma makes borscht, perogies etc. We all call her Baba (short for babushka) by the way😂
