What you made is basically arista in crosta (loin in crust). We usually wrap the loin entirely in bread crust, as that soaks up every bit of juice and protects the meat. We sometimes add sausage to it too.

So for anyone who doesn’t want to buy whatever that thing was, cook loins for a bit shorter than you think you need to. Juicy every time and the meat will be cooked properly.
