I bought onions that were growing out the top, cut the flesh off the onion leaving the center intact with leaves coming out the top with root intact. If root is very dry slice off just dead part making certain to leave some root that the onion will regrow from while you have the majority of the onion to use to dry or cook with. You may have 2, 3, 4.even 5 onions you can grow from one large onion do not make pieces to small. Very carefully separate roots without cutting into the parts you want to grow. DON'T SOAK THEM IN WATER THEY WILL LIKELY ROT. Just plant them 1-1.5 inches deep in moist not wet soil. Don't over water them or they rot. Just normal watering they regrow a new onion in time. The papery thin onion peel can be carefully washed under running water then dried to make onion powder. I put them on a cookie sheet or 2 in the oven heat oven to lowest temperature mine is 170 F then immediately turn heat off when it beeps. DO NOT open door until oven is totally cooled off then move the peels around repeat this until the peels are totally dry sounding when moved around. Any moisture at all in them they will mold. Do not leave oven turned on as they will burn + discolor. I cut + dehydrated the onion pieces in single layers in dehydrator until really dry over drying is better than under drying but to hot a temperature is what burns them brown or black. 155 is what my dehydrator said to use until dry about 7-12 hours. Mine were good at 9 hours. I got empty Jars Olives come in free from a store selling olives for free to store each different type of slice + peels in. You can dry green onions as well. Green onions buy with roots on put them in tiny bit of shallow water judt ot above roots or they rot, until roots show tiny signs of growth 1-2 days. Cut onion 1/3" above the root making sure not to get dirt on the cut edge. Use the onion to eat. Make a hole size of the root in moist soil put root in the hole cut side clean in 3 weeks you will have a new green onion from the root.
