Freezing waffles works great! Heat up in the toaster and you’d never know the difference from freshly made!!

To get a perfect waffle, you need to underfill the iron and make sure the batter has spread to all quadrants of the iron. As the waffle cooks, it expands and fills the entire iron surface. This takes a little experimentation finding out how much batter your iron actually needs. The other problem is if you overfill the iron, the waffles will taste rather bready because they're compressing the batter and making it dense

If you are freezing waffles, it is important to deep freeze the waffles and not put them in a refrigerator freezer. You should be especially cautious about putting them in a frost-free freezer.

Frost-free freezers stay frost free by raising the temperature slightly above freezing at intervals to keep the ice off the coils. A deep freeze, without a frost-free cycle, doesn't do this and keeps the temperature well below freezing all the time. This makes a much better frozen product.

I always separate the egg yolks from the whites. I beat the whites into stiff peaks and fold them into the batter. Makes a light delicious waffle. You can freeze the cooked waffles. I put them in an ice cream bucket with plastic wrap in between. Grandkids put them in either the toaster oven or microwave to reheat depending on how fast they want to eat.

To stop the waffles from getting soggy when making a big batch is to not put them on a plate from the machine, but put them on a rack so that they can steam into the air and not onto the plate which makes them soggy. You can either put them that way in the oven to keep warm, or once they've cooled enough to no longer be steaming they can be put on a plate in the oven to keep warm.

Felicia, thank you for putting in the time to make this introductory video for fresh milled waffles. Here are a few tips from my 10+ yrs of making large batch Sabbath morning waffles when the grands come to visit.
*All My Ingredients Are Room Temp Before Mixing The Batter
•1) I use Kamut/Khorasan for the buttery flavor of the berries
•2) I make my own cultured milk by putting a tbsp of apple cider vinegar in the measuring cup then adding the milk & letting it ferment while I am milling the grain
•3) I use melted coconut oil that I fold in at the end
•4) I let the batter rest for at least 30 min & add additional plain milk if needed
•5) to keep the exterior of the waffles crispy while baking up the big batch so everyone can sit & eat together family style place the waffles directly on the oven racks w/ the oven set at its lowest setting (mine is 175F)
•6) if there is batter left or if making ahead of time place a piece of Saran Wrap directly on top of the batter like you would when making a custard then cover the entire bowl/container, refrigerate & then bring the batter back to room temp before cooking.

I have the single Cuisinart waffle maker, and I love it. Thanks for the recipe. Makes a Saturday morning extra special. An Apple or blueberry compote is great on waffles also.

nice! for anyone who doesn't want to source the grain and mill it themselves, Castle Valley Mill in Pennsylvania, order online. restored 18th century water mill, they source from individual farms so you get exactly what Gd grew. I have 6 in the house but only 2 waffle eaters. It would be nice to have this recipe in bakers percentages for those us who need to scale down.

You can freeze waffles, just cut them into sections before you freeze them and then when you want to heat them up pop them in the toaster :-)

I prepare the entire batch of waffles, then refrigerate the left overs after cooling. Then to reheat, I just place them into my preheated waffle iron. They are delicious!
