Battle Iroquois White Corn, featuring heirloom corn flour, roasted corn flour, and dried corn kernels from the White Iroquois Corn Project on the Ganondagan State Historic Site in Victor, NY took place on February 19, 2017. Nickel City Chef Edward Forster of Chez Amis at the Curtiss Hotel and his sous chef for the day, Joseph Fenush III, took on Challenging Chef Ross Warhol of Oliver's and his sous chef Nic Denner.
This episode of Nickel City Chef was judged by Chef Mike Andrzejewski, owner of Seabar and Cantina Loco and two-time James Beard nominee, as well as writer Bao Ong of Bon Appetit, and local food and drink writer Caitlin Hartney.
The show was held at Artisan Kitchens & Baths in Buffalo, NY and hosted by Bert Gambini, Christa Glennie Seychew of Feed Your Soul, and Chef James Roberts of Toutant.
