Some restaurants defrost prawns to order.... As they don't usually have a large demand for them... even when you defrost 3 kg of them in the coolroom, if you're busy you may sell out... Unless it's set menu, this actually isn't so bad, straight in the sink with no barrier is another thing...

We defrost things in the water all the time. Including Lobster Tails. I don't see an issue. We season and fry them so they taste good. Not just serve them the way there are.

The Chef is under a lot of pressure and needs help & support. Gordon is out of order for having a go. Gordon knows full well, every Chef has done this at some point in their career. I bet Gordon has done it a few times.
