You should make a part 2 where u go from 100 days to 200 days to do everything you want all that. Maybe even get another horse or even a herd of them but always have a stall empty for rocky

I believe I know what the jukebox was. It’s from the mod Sophisticated Backpacks. Mobs can spawn with backpacks with certain arguments and one of the mobs probably spawned with the music argument (hence why you heard it even though the music setting was off.)

I know this is horse focused, but if you wanna hear suggestions for mods you might wanna try genetic animals! It adds genetics to the other farm animals (cows, sheeps, pigs, rabbits, llamas, chickens...), gives them some new utilities (you can saddle and ride bulls! Gives a use to the vanilla minecraft saddle) and all around fits very well with swem and the minecraft farm life experience. It doesn't change wolves/dogs nor horses so it should be compatible with doggy talents and swem!

I have watched many 100 days challenges on YouTube, and I can confidently say that this is my favorite one. Your buildings are so beautiful and creative, it was almost like magic to watch the farm slowly develop into a stunning place that I wish I could live at! And losing rocky was so sad, I almost cried at the grave scene 😅
