The issue with animating berserk is quite funny to be honest:
The art is too fucking good.
The battle scenes, the places and the sheer amount of characters in a single panel make berserk almost impossible to animate without an insanely huge budget.
Just go look online for some of berserk’s best panels. I even remember one with around 120 CHARACTERS.

Step1-Naruto can keep Kurama power remain and give it to Boruto
Step2-Sasuke give his sharingan to boruto and become blind
Step3-random doctor that better than tsunade can cure Sasuke rinnegan
Step4-Sasuke died in future fight and give his rinnegan to boruto (graft at forehead)
Step5-Boruto can use Kurama power better than naruto and use Sasuke eyes better than any Uchiha
Step6-Boruto didnt get nerfed and become godlike character in his son show

To be Fair, the first episode of Redo of Healer shows you what kind of story it's going to be. So can you really call it a disappointment when you yourself chose to continue to watch a series like that.

I think Shikimori was misunderstood to be a more dramatic anime. I have only seen the anime so I dont know how well it was adapted from the manga. Anyway, I got the impression it was just supposed to be a wholesome, slow-paced feel-good story (That's the best way for me to describe it xD) where you dont have to fear things going wrong. And what goes wrong is resolved in a beautiful, friendly way that makes everyone happy.
For all the other anime from this list I watched, I understand the complains (though I don't necessarily share them).
