The thing is, we're measuring the effects of gravity, not gravity itself*. Based on the effects we're observing, there appears to be a deficit of matter. So, it could either be due to the presence of unseen matter (dark matter), OR gravity may not function exactly as we currently understand it.

* We're actually starting to be able to measure gravitational waves, but that has nothing to do with this.

What matters is that in reality nothing we think scientifically, mathematically even from the most brilliant minds would end up being even .00001% what actually exists in the universe. We have no idea what created the universe, we have no who or what created it and on a galactic scale nothing any human thinks is gonna be how it actually is in space

Long story short, the various gravity components that affect gravity is radiation density, matter density, curvature density and the cosmological constant. The gravity that created the structure we see in the sky SHOULD be a caused by a matter component, and that is why we imply that 85% of what’s causing that is matter, which is unknown to us because it doesn’t interact with light so we can’t see, and it hardly interacts with normal matter except gravitationally. Hence we call it “dark matter” because it SHOULD be matter, judging by the effects, but it’s almost invisible to us. Not just in our eyes but in measurements. It’s only effect we can measure and imply things about it is its gravity. There’s plenty of evidence that it’s matter, just not the periodic table kind of matter. Not made up by atoms.

The cosmological constant part, which creates gravity such that it pushes the Universe to accelerate in size, is a candidate for “dark energy”. Energy which we do not know the form of. But the gravity induced by this has entirely different effects than the matter one. That is why we can say for certain that the dark energy part, is not additional matter.

We have no idea what space even is. It may be that space itself is a mountain range of hills and valleys that is responsible for both the gravity gradients and the matter densities that migrated there. They thought they knew...and shoved it down our throats for the past 100 years, but they don't know Jack!

'Matter' is an assumption.
We OBSERVE that gravity doesn't follow the expected rules.
There may well be no additional matter or energy at all.
There is precedent for this.

Its basically like when they found Neptune by reverse engineering the movements of the other planets to figure out where Neptune shoudl be...except in the case of Dark matter, there's no Neptune apparently.
