APPLE CRUMBLE CHIA PUDDING ✨🍎 Who’s ready to dig in? 🙋🏼 @romylondonuk
Who wouldn't love dessert for breakfast?? You can surely count me in - especially, when it’s apple season! 🥧🤤
🍏 INGREDIENTS:
2 apples, peeled & cubed
Juice of 1 lemon
1/2 tsp cinnamon
1/4 tsp ginger
Pinch of salt
For the chia pudding:
1/4 cup chia seeds (50g)
1 tbsp maple syrup (or more if you like it sweeter!)
1/2 tsp cinnamon
1/4 tsp ginger powder
1/8 tsp nutmeg
Pinch of ground cloves
300ml plant milk
For the crumble:
1/4 cup rolled oats (20g)
1-2 pitted dates
2 tbsp pecans
1-2 tbsp melted coconut oil
1/4 tsp cinnamon
👩🍳 HOW TO:
Step 1 - In a saucepan over medium heat, mix the apples, lemon juice, cinnamon, and salt until the apples are soft and lightly caramelized.
Step 2 - For the chia pudding, combine all the ingredients and stir well. Set aside for 20-30 minutes, stirring occasionally. You can prep this the night before for an easy morning!
Step 3 - For the crumble, pulse oats, dates, pecans, and cinnamon in a food processor until crumbly. For extra crunch, bake the crumble on a lined tray at a low heat until golden.
Step 4 - Layer your apple pie chia pudding in a jar, top with crumble, and drizzle with your favorite nut butter. Then, it’s time to dig in! 🥄
