If you paired the lvl’s on one side you would have a much stronger header for the garage door. All the filler is separating the load capacity of the lvl’s. Unless you only need the strength of one of them to mount the garage doors

You should laminate all the wood pieces (LVL & plywood) together and put the styrofoam on one side of the lumber. There are directions provided by LVL suppliers online and none of them show a styrofoam sandwich. They also specify the appropriate fasteners to use when making a beam.

Great work! You should set a dinner alarm. Food helps brains and bodies work better. Easy to work too long with good lights too. Amazing job but remember marathon pace, not a sprint. All the best to you both for a great summer!
