Varys is a great answer by Kit Harrington. Idk if this is said in the show, but in the books there's a scene where Varys says that his main goal is to support the seven kingdoms and its people by supporting rulers he believes will be most beneficial to them. When he says that he "serves the realm" he really means it, its not just a political statement.
