Instructions:

Make the Macaron Shells:
1. Prepare baking sheets: Line two baking sheets with parchment paper or silicone mats.
2. Sift dry ingredients: In a bowl, sift together almond flour, powdered sugar, and cocoa powder. Set aside.
3. Whip egg whites: In a clean mixing bowl, beat egg whites and salt with a mixer on medium speed until foamy. Slowly add granulated sugar, beating until stiff peaks form.
4. Fold in dry ingredients: Gently fold the sifted dry ingredients into the whipped egg whites using a spatula until the batter flows like thick lava. Be careful not to overmix.
5. Pipe macarons: Transfer batter to a piping bag fitted with a round tip. Pipe small circles (about 1 inch in diameter) onto the prepared baking sheets.
6. Rest the macarons: Let them sit at room temperature for 30–60 minutes until a skin forms on top. They should feel dry to the touch.
7. Bake: Preheat oven to 300°F (150°C). Bake for 14–16 minutes. Let cool completely before removing from the baking sheet.

Make the Chocolate Ganache Filling:
1. Heat heavy cream until just simmering, then pour over the chopped chocolate.
2. Let sit for 2 minutes, then stir until smooth. Stir in butter if using.
3. Let the ganache cool until thick but spreadable.

Assemble the Macarons:
1. Match similar-sized macaron shells together.
2. Pipe or spoon chocolate ganache onto one shell, then sandwich with another.
3. Let them rest in the fridge for a few hours (or overnight) for the best texture.
