KEY! LIME! PIE! A pie with no season, a timeless pie, my personal favorite pie. If pressed to think of a more perfect dessert, I simply could not. While most key lime pies defer to sweetness over tanginess, this one is decidedly “limey”, which is its best asset, IMO (it was once described by one person as “too limey”, but I dismissed this critique and absorbed it as a compliment!). It is also vaguely tropical (thank you, coconut oil in the crust), has a very healthy ratio of crust to filling, and is topped with a tangy (+1 more tanginess) whipped yogurt/cream combo.

I should also mention that while you could choose to use both a food processor (crust) and a hand/stand mixer (filling/topping) for this pie, I am pleased to report you don’t need either to properly execute this perfect food.

1:38 Crush graham crackers and pour into mixing bowl
3:18 Add butter, coconut oil, sugar, and salt to your mix

7:16 Bake the pie crust for 12 - 15 minutes
7:47 Juice and zest limes to start your filling
10:35 Whisk egg yolks and condensed milk in a large bowl
12:37 Add lime zest, lime juice, and salt

13:26 Bake the pie for 20 - 25 minutes
14:15 Whip cream and powdered sugar together until stiff peaks form
17:02 Whisk yogurt into the whip cream and sugar mix
17:39 Finish the pie with whipped topping

I made this pie yesterday for the first time. I found juicy limes in the grocery store, used a juicer, and it was a breeze to get 1 cup of lime juice. After it baked, I chilled it overnight. Took it out this morning, made the topping, and it's heaven!! Perfectly tangy, not too sweet. The whole pie came out perfect in my opinion. I love everything about it. Only problem is I made it and had 2 people over for a slice, but they're gone, and now I'm alone with about a half a pie left. So, guess who is going to be going to the fridge every 30 minutes and taking another bite of pie until it's gone?!! Thank you Alison, this is a great recipe.

It’s the fact that Dill-bert still exists and shows up a tiny bit that makes it funnier lolol and also, never tasted a key lime pie before, or any kind of acidic, soury type of pie, but looking at this recipe, you know what, i’m gonna just do it this weekend. Even if it was meant to be eaten by me and me only. Because i love me, like a lot.

Oh my, this is my husband's favourite so he's a connoisseur of Key Lime Pies. I really, really hope I can try this out once or twice and then triumph by baking THE BEST one he's ever had in his life. That's my mission and this is the recipe and the teacher I will trust. Thank you for choosing this as a recipe tutorial to upload. :)

Favourite dessert, hands down!!!
My aunt lived in Mexico, where limes are gods :P She gave me a trick to choose the juicier limes : find the ones that are shiny and that have the thinnest rind. I has never failed me. :D

Couldn’t wait to tune in today. I made yr salmon last night, Alison but the guests began devouring it before I could find my phone to take a picture, those buzzards. I even spooned it up on a serving tray just exactly like you showed us. My dad says it may have been the best salmon he’s ever had! Thanks.

for anyone that's curious...if you really want to go for the bottled stuff use Nellis& Joe's key lime juice. I use it at the restaurant I work at for desserts and it's great, it doesn't taste fake or anything

When someone is feeling down, I make them a “key lime pie”, and present it in a glass pie dish. It works every time. Like Johnny Appleseed, I say keep the dish and encourage them to make pies. Made this last night and that yogurt-whipped cream was genius and delicious! It cuts the sweetness of the filling and gives much refreshing taste to the pie! I’ll definitely make this again
