Hi guys, welcome to Marks Home Kitchen, where i cook family friendly recipes that everyone can enjoy. Todays video is for a Guinness and Caraway rye Bread. This is a bread that we make on a regular basis for soups or just with Kerrygold butter. Great with cheese for sandwiches or even just with a nice pint of Guinness
INGREDIENTS(makes 1 loaf)
250g strong flour
250g rye flour
1 teaspoon salt
2 teaspoons fast-action dried yeast
2 teaspoons caraway seeds
300mls Guinness
1 dessertspoon black treacle.
METHOD
Warm the Guinness and treacle in a saucepan
Put the strong flour, rye flour, salt, yeast and caraway seeds into a mixing bowl and add the warmed Guinness/treacle mixture.
Mix the ingredients into a moist (but not wet) dough.
Knead briefly on a floured board, put into a lightly greased bowl and cover with cling film
Leave to rise for 2 hours in a warm place.
After 2 hours, knock back the dough and knead on lightly floured board for 2-3 minutes.
Shape into an oval loaf and place on a well oiled baking sheet and sprinkle some more caraway seeds on top.
Cover with a damp cloth and leave to rise for 1 hour in a warm place
Remove the damp cloth and make 4-5 slashes crossways on the top of the loaf
Put in a pre-heated oven 230c and immediately turn the oven down to 200c and bake for 25 minutes
Remove the loaf and check it is cooked by tapping the bottom of the loaf. It should sound hollow
Turn onto a wire rack and leave to cool
