I'm always surprised that the flattop's dont discolor more often in teppanyaki grills. They always seem so clean and seasoned compared to your average back kitchen flattop.

The unknown powder might be MSG, (MonoSodium Glutamate). Its to intensify and enhance umami flavors in sauces, broths, soups and many more foods. But is used in fried rice as well.
