Century home here with dirt floor and stone walls.

I have installed rigid insulation on the walls and taped the seams. From there have installed 6 mil VB on the floor and ran it 10-16" up the insulation and taped. Just working on framing it out with 2x4 (16 OC) and eventually will install R12 Rockwool bats and the VB but need to get the humidity under control first with dehumidifier (once I have sealed off the area).

My question is can I have the dehumidifer drain UNDER the VB on the floor into the dirt floor (keeping in mind I will be taping any access points in the VB to seal it).

My furnace is in this area so I am aiming to make it a little warmer/drier and less "musty" as well as making it into a storage area for large totes (I am finishing it off with 3x3 panels I picked up from local factory).

If the shims look rough do I have to put a level on it and jack it up and shim it out? That's procedure or?

How and why are shims so common and how do they meet code

It appears that they don't recommend a termite inspection gap--which is contrary to termite inspector recommendations.
