Nicole makes an easy copycat recipe for Costco’s iconic chicken bake. Filled with juicy chicken, smokey bacon, and melted cheese, this oven-baked stuffed pizza crust tastes even better than what you get with a Costco membership!

Let pizza dough rest at room temperature about an hour before using. Preheat oven to 350. Season chicken with salt, pepper and garlic powder.

Heat a large skillet over medium-high heat. Add oil. Place chicken breast in skillet, seasoned side down and cook, undisturbed, until golden brown, about 5 minutes. Flip and cook one more minute.

Add just enough water to fill the bottom of the pan and remove pan from heat. Place pan in oven and cook until internal temperature reaches 165, about 17-20 minutes. Remove from heat and let stand until cool enough to handle. Chop chicken and set aside. Increase oven temperature to 400.

Sprinkle flour on to a large work surface. Divide pizza dough into 3 portions. Roll each portion into a large circle about 12-13 inches wide. Spread dressing evenly over dough circles leaving a 1 inch border. Sprinkle 2 tablespoons parmesan cheese over dressing. Reserve 2 tablespoons shredded italian cheese blend and set aside. Top dough circles evenly with chicken, bacon, green onions and remaining Italian cheese blend. Fold outer left and right sides slightly over the filling. Roll the bottom of the dough circle over the filling and then roll towards the top edge until fully wrapped. Pinch edges to seal and use hands to work into a long long shape about 12 inches long. Place filled dough, seam side down, on a parchment lined baking sheet.

Brush beaten egg over tops of dough and sprinkle evenly with cheese blend. Sprinkle each with 1 tablespoon shredded parmesan cheese. Bake until golden brown, about 20 minutes.

I started making these at home about 5 years ago. I use Italian feather bread dough. Divide x 3. These will be LARGE. After baking and cooling I cut them in half, wrap in parchment, bag and toss in the freezer. Straight out of the freezer into the toaster oven on a piece of non stick foil for 20-25 @ 350.

Instead of the egg wash I baste on more Caesar dressing then the cheese.

I also started making other versions. Homemade hot pockets?

Toss cooked chicken and artichokes with Greek dressing and add feta to the cheese mix. I use Munster, Provolone, Havarti, whatever I have. Add in some olives and green onions.

Another version is chicken, ham and swiss with broccoli and creamy Italian dressing. Possibilities are endless. One of these days I'm gonna try meatballs and sauce.

I am definitely giving this a try! You could do so many different things with the fillings. I also think it would do well camping. Make ahead, wrap in foil, heat over the fire.

A little tip if I may !! I always keep the brown paper bags from the store, when i finish cooking the bacon I put the pieces on the brown paper bag to absorb the grease.

Perfect! The only change I would make would be to use the Costco rotisserie chicken. Easier and more flavorful (and probably what they use).

This video reminds me of why I never put anything in the oven without a timer. I know I will forget otherwise!

Made these yesterday and it came out great! Took a shortcut - used Costco rotisserie chicken, just warmed it up a bit with some spices and herbs in a pan. My boys loved it more than the original! :))
