Blade orientation to the handle:
Pararell blade (Axe) = great for splitting wood
Perpendicular blade (Adze) = great for carving wood

A good way to explain this is by examining two simple machines. A lever and a wedge. A wedge is the axe normally, it splits something and the two halves don't interact with the handle so the wedge can go through. A lever is used to change the amount of force that can be exerted on an object based on the handle length compared to the fulcrum position. The sideways axe is a wedge which becomes the fulcrum and the handle length multiplies the force you can exert on the wood.

They do exist, its called an adze if im not mistaken, and is used to roughly shape wood into planks and the like. Good job on that quick forge!
