Ingredients (serves 2)
7-8 cabbage leaves
Pluck out the cabbage leaves carefully without tearing. Heat up some water, add salt in it. Blanch the leaves in hot water for 5-6 minutes. Take it out and completely drain the water.
For the filling
150 gms minced chicken
1 tbsp minced garlic
1 tsp minced ginger
2 tbsp light soy sauce
Salt if required
Mix everything well and set aside (no need to cook the chicken beforehand)
For the jhol gravy
1/2 tsp jeera
1/4 tsp black peppercorns
6-7 garlic cloves
1/2 inch ginger piece (cut into pieces)
1 small size onion (diced)
4-5 soaked red chillies
1 medium size tomato (diced)
Handful of coriander stems
1 tsp Kashmiri chilli powder (for nice color)
2 tbsp roasted peanuts
1 tbsp roasted white sesame seeds
Salt as per taste.
1 tbsp Lemon juice
Cook some jeera and black peppercorns in little oil. Add the ginger, garlic, onions. Fry for a minute then add soaked red chillies, tomatoes, coriander stems, Kashmiri chilli powder and salt and cook till the tomatoes become soft.
Crush the peanuts and sesame seeds in a blender. Add the cooked onion & tomato mixture. Add 1/2 cups water and blend everything smooth.
Take it out in a pan. Add 1 cup of more water. Check the consistency, should be thick consistency. Bring the gravy to boil. Turn the heat off and squeeze half a lemon (very important)
Simply add around 1 tbsp of filling in each cabbage leaves and roll it up as shown in the video. Grease the steamer and steam the momo for 8-10 minutes. Place the momo in way where the opening is underneath.
Once done cut the momo in half. Pour the jhol gravy on top. Put some chopped coriander leaves or spring onions and chilli oil on top and enjoy !!

As a Nepali, I will say that Jhol momo is embedded in our hearts ❤ anyone who hasn’t tried this dish yet is severely missing out. 😊

Quick question.
If we blanch the cabbage leaves and then steam them again, won't they become overcooked???

Looks too good. I'm such a cabbage fan and also trying to cut gluten from diet. I might pan sear the rolls though...:)
