Ideas:
Add a water bucket drop, where a dropper drops a bucket, so you have to catch it and place it. After, clicking a pressure plate will clear the bucket from your inventory and the water.
Add some neos or some bow shots, where you get a high-punch bow and have to shoot yourself across a large area
Add some traps, where you have to dodge some traps as you do it, and if you slow you get smacked and thrown off (likely arrows)
Make a series of these parkour gauntlets that are based off of something (For example, a bedwars themed one vs skywars one. The bedwars one could have it so you have to break a bed to fire off a redstone pulse to a piston that pushes out a block for you to land on

Ideas for how to proceed:
Add sections where mobs spawn and you have to knock them off or else be knocked off
Add projectile sections where who have to hit a target to make pistons extend
Add a tower climbing section, and at the top you have to do "The Dropper" through all the blocks you placed to get up
Add checkpoints and invite other youtubers (checkpoints are super important if you do this)
Add elytras (elytras let you go faster than sprint jumping on flat ground by sprint gliding)
Add insta mining snow: Have a reaalllly huge block of snow, and you want to get to the other side and at the top, so you have to shovel out a path AS you run through it.
Add fall damage, and give yourself hay bales (so you have to clutch with the hay bales to survive)
Add floating water sources that you jump into and use a riptide trident to launch yourself
Enderpearls?
Add a horse section! (You have to place the cobble blocks while riding and jumping on a horse)
Try climbing a rectangular tower on the OUTSIDE rather than on the inside

One idea I had was that you'd be given a bow and arrow, and would have to shoot targets while jumping.
Also, you could try to hitch a ride on a minecart as it runs off.
