MASON JAR TACO SALAD!🌮 Busy back to school season is easier when you have these in your refrigerator!

Need lunch ideas? This Mason Jar Taco Salad is IT! Perfect for the busy back-to-school season, it’s a protein-packed meal that’s easy to prep and you can take it on the go. Start with a salsa-Greek yogurt dressing at the bottom, then layer in seasoned ground turkey, crisp lettuce, black beans, corn, tomatoes, avocado, and cheese. Top it off with tortilla strips for that necessary crunch. I could honestly eat this every day!
YOU’LL NEED
-1 lb ground turkey
-1 tsp chili powder
-1 tsp cumin
-1 tsp garlic powder
-1 c black beans
-1 c corn
-1 pint cherry tomatoes, halved
-1 avocado, diced
-1 c shredded cheese
-2 c romaine lettuce, chopped
-¼ c Greek yogurt
-¼ c salsa
-Cilantro, chopped (optional)
-Tortilla strips, homemade or store-bought
For the dressing, mix the salsa and Greek yogurt in the bottom of 3 large mason jars. Saute the turkey with the spices, then layer with the remaining ingredients. Top with tortilla strips and avocado just before serving.
