Here is a few things I’m learning eat little onion, no balsamic and those Mio’s- helpful hint- look for ones with a green ring around the top - their made with Stevia which is keto friendly. The other Mio’s is junk sweetener added!! I’m newer to Keto but still learning myself.

If you put the chicken in the bacon with the chesse side down, wrap and flip over to cook, the bacon won't bake off. That looks delish! I'm gonna try it this week.

That looked delicious. I use the califlower mash too, cooking longer def does make them thicker! Try adding about 2 tablespoons of cream cheese with the bacon and cheddar OMG so good only way my husband will eat it. He loves it!

You could probably just cut the chicken up and add the stuffing on top in a crockpot and be done. That seems like way too much work lol, I have become a lazy cook lately. So I meal prep most stuff on Sunday....make a breakfast cassarole, boiled eggs, bake my bacon for the week, chop and clean my romaine, and make a dessert ( keto CC cookies, fat bombs, etc). Then most stuff is just grab and go when we need it. Also, I HATE quest bars but the Maple waffle flavor is pretty darn good...you should try it. 😊
