Red Mullet is a beautiful fish with bright red scales cover its body and it has a plump, rounded body.

Not only is its skin very pretty, it’s also fantastically flavoursome with a high fat content. When cooked, it has a wonderful crunch on it – like fish crackling!

Red mullet can be roasted whole on the bone for a fabulous flavour or pan fried in fillets quickly as to retain its marvellous moisture.

Like lots of fish, its fab on the barbecue, or cooked en papilotte with punchy flavours like chilli and garlic.

Because it’s a fatty fish with a good flavour – much stronger than its other white fish counterparts – it can stand up to more robust seasonings, so go wild!

I made red mullet. It has a nice shellfish taste but its takes effort to eat non-meat parts which of course you don't want. Frying seems to work better than baking . Keep the flavors light in my opinion. Maybe just some thyme. Fish does not hold up to strong flavors.
