3rd generation Vermont sugarmaker here: You're making maple cream techincally, not maple butter(which has butter added), but in a bit of a wrong way. You shouldn't put it over ice, that cools the outside faster than the inside and makes the crystals very uneven. you want to wait until your mixture is between 195F and 190F and start churning(stirring) then, and keep doing that until it achieves the consistency you'd like, while it cools naturally. our family has one of the best recipes around (in my humble opinion), people order it from all corners of the globe. :) -porter's sugarhouse, corinth, vt

Maple syrup is mostly sugar so its basically like heating up sugar to make hard candy. By mixing it you're adding air basically doing the same thing that pulling taffy would. you made maple taffy, which is pretty cool

Yes, it is called Maple Taffy, and if a bit of butter, heavy cream, condensed milk, and keep condensing it, preferably over a double boiler. You end up with maple caramel fudge. If you want to get really fancy add some rum.

In Canada, we do this and then pour it on top of snow and roll a stick on top of it and eat it. It's called maple taffy or snow taffy.

Also known as "Maple Cream", here in Indiana. Usually, the stuff I've seen sold in stores also has maple syrup on top, so you would have to mix it up before using it.
