Ep.6 in my 'From Scratch' series - Homemade Mozzarella (Fior di Latte) 🧀
Can’t get much better than freshly made mozzarella. So delicious. Great fun to make and surprisingly easy! The liquid rennet and citric acid can be found online (Amazon is your best bet).
Ingredients:
Makes 3 balls
4.5 litres organic whole milk (2 large bottles / 1 gallon) - buffalo or cows milk
2 tsp citric acid, diluted in 1 cup (237ml) water (food grade)
1/4 tsp liquid rennet, diluted in 1/4 (60ml) water
Equipment:
Large pot (to fit all milk)
Thermometer
Sharp knife
Rubber gloves, but if not, two wooden spoons
Method:
1. Tip the citric acid into the pot, followed by the whole milk. Give it a gentle stir and then place onto the hob.
2. Heat to 30 degrees C / 90 degrees F whilst gently stirring.
3. Remover from heat, add the diluted liquid rennet and stir for 30 seconds.
4. Cover and leave to rest for 30 minutes until curds have formed.
5. Using a sharp knife, cut the curd into squares (checkerboard pattern).
6. Place back onto the hob and heat to 40 degrees C / 105 degrees F. Gently stir whilst doing this, but make sure not to break up the curds too much.
7. Remove from the heat and strain the curds into a new colander.
8. Tip the curd into a new bowl.
9. Heat up some water to 80 degrees C / 176 degrees F and tip onto the curds.
10. Using two wooden spoons (or hands if you have thick rubber gloves) stretch the curds until smooth and incorporated. Should take a few minutes. If the cheese stays grainy, the water is not hot enough - empty the bowl of the water and repeat using freshly heated up water.
11. Once stretched and smooth, shape into mozzarella balls.
12. Best eaten the straight away / the same day, but can be stored in the fridge for another 48 hrs if kept in a brine, covered.
13. To make a simple brine, mix together 3 tbsp salt, 3 tbsp whey (yellow liquid that you get after separating from the curds) and 4 cups cold water.
