Making homemade puffed rice couldn’t be easier! 🍚

PUFFED RICE 🌾

- 1 x cup of parboiled rice
- 2 x tbsp water
- 1-2 x cups salt

STEP BY STEP:

- mix the raw rice with water
- heat it up until fully dry
- heat up your salt in a separate pan
- add your rice which will start puffing in 5-10 seconds

RICE BARS INGREDIENTS: 🍫

- 3 x cups puffed rice
- 3/4 cup peanut butter
- 1 x tbsp flax seeds (optional)
- 1 x tbsp coconut oil
- 1-2 x bars of dark chocolate (100-200g)

STEP BY STEP:

- combine all your ingredients except the chocolate and rice
- mix well and pour in a bowl over your puffed rice
- add the mixture to a square or rectangular container, lined with parchment paper
- press down with a spoon to make sure it’s firm enough to hold the shape of your container
- on a separate double boiler, melt your chocolate and pour it over your puffed rice mixture
- refrigerate for 1-2 hours
- remove from the container and use a sharp knife to cut your bars
- store in the fridge for up to 5-7 days

it’s good to mention use kosher salt or salt that does not have iodine. Iodine salt will make your puffed rice extra salty.
Source: Me. I’ve done it.

edit: came to my attention I should update to properly guide. Iodine salt aka table salt is normally "fine salt" which is like powder, more salt per volume = saltier.
Suggestion: use coarse salt? I've had puffed rice and it wasnt so salty. I done puffed rice twice second time I dehydrated the paraboil rice even drier and it's still too salty.

In india we called puff rice as kurmure and this puff rice bar as chikki which is a traditional sweet.
