CHRISTMAS DINNER!
Plans might be a bit up in the air but we can still makes plans to celebrate. For the big day itself, Jamie’s been
thinking about ways to plan ahead even if we’re not sure yet who we’ll be cooking for and how many will be
round the table. Embracing the changes, Jamie shares a delicious way of tailor-making the turkey that uses the
whole bird in a more flexible way. Whether you’ve just bought a crown or the whole bird, Jamie shows us how
we can make a beautiful sage, onion and apricot stuffing that stuffs both the crown and/or the accompanying
legs that can be rolled and placed in the oven at the same time or saved for another day, meaning we can be
truly flexible to accommodate the changing times and numbers coming for dinner. Served with a simple but
phenomenal chestnut gravy and a lesson in the best way to layer flavour with our veg, this will be a Christmas
dinner that’s perfect for whatever we need this year.

I watched you cook a turkey a few years ago. So big it was almost spilling out of the pan - unstuffed except for some Thyme and Clementines. But it was what you did AFTER it was cooked that amazed me. You covered it tightly in tin-foil, then a kitchen towel - then took almost 2 hours to prepare all the rest of the meal - all the sides, gravy, sauces, etc. And at the end of that TWO HOURS of sitting, covered - that bird was STILL HOT !!! Not only that - when I used that incredible recipe to do my own bird that year - it was not only still hot - but TENDER as could be !! I have never cooked a turkey any other way since then. And I serve it with several sides that involve AUTUMN veggies - with nary a "green bean casserole" (ugh) or mac-&-cheese to be seen. My late Mother-In-Law was from Harom (Yorkshire, GB) - and we had an "English" Christmas every year - with Christmas Crackers, a Loonie (I'm Canadian - and she was a War Bride) baked into the Christmas pudding - which was brought to the table in flames. People put down British cuisine - but I've found it's some of the best comfort food in the world - and I LOVE it !! Thank you, Jamie - for sharing this wonderful expression of love for family with us !!
