Made this for lunch today but had to use almond butter instead of peanuts. It was delicious! I put sliced almonds on top instead of peanuts. On the recipe you forgot to add edamame.

I made this today. I did not have peanuts so I roasted some shelled sunflower seeds in the air fryer with a little bit of salt. It turned out well, although I was craving a bit of crunchy with it. I will need to think on what to add.

I had to look up "edamame"! They're "immature soybeans in the pod". Not available in my part of the world so an alternative will have to do - maybe sugar snap peas or snow peas (aka mange-tout which means "eat everything").
