LUCKY LEFTOVERS!: Corned Beef Reuben

Since I had leftover from the DELICIOUS Corned Beef & Cabbage dish I made, I decided to pull out all the Jewish Delicatessen stops and turn the leftovers into a KILLER Reuben! Just use the cabbage you cooked infused with the au jus instead of sauerkraut - comes from the same veggie anyway!

All you need is some bread (rye preferred), a little butter, a few slices of Swiss cheese and some Russian dressing!

This was better than the day I made the corn beef. No comparison. I didnt have sauerkraut so i had made coleslaw and i liked it with the reuben, and homemade 1000 island dressing made it so good. Never thought to make it this way.

Yum! We love Reuben's and always make them with our leftover corned beef brisket.

Sure it's bad and you might want to go for a extra time in the Gym. There is nothing in the world healthier than a little happiness and trust me this sandwich will make you happy. Thank you Jeffrey and I have my St. Patrick's day meal for the year and the sandwich next day!

Sorry Jeff. I love you and your recipes but Rubens have to have sauerkraut or they’re not Rubens.
