Learn how to make the best oat flapjack cookies and it is truly scrumptious. Feel free to add things in like raisins or nuts or chocolate chips! And this is perfect for packing into school lunchbox.

Ingredients:-
Basic Ingredients:-
Porridge Oats / Rolled Oats - 300g (3.2 cups)
Butter- 200g
Sugar- 100g (1/2 cup)
Optional Ingredients:-
Raisins- 1/2 cup
Desiccated coconut-1/2 cup
Cinnamon- 1/4 tsp
Vanilla essence - 1/2 tsp
Preparation:-
Preheat the oven to 180c/350F. Prepare 2 baking trays lined with parchment paper.
Put the rolled oats in a large bowl and add the desiccated coconut, raisins, and cinnamon.
Melt the butter and sugar in a small pan over gentle heat until the sugar has dissolved. Remove from the heat.
Pour the melted butter and sugar into the rolled oat mixture and mix well. Add vanilla essence at this point.
Make evenly sized balls and flatten a little. Place them slightly apart on the baking tray.
Bake for 20-25 minutes or until light golden brown. Leave to cool slightly before enjoying or Store in an airtight container for up to a week.
