Classic Boudin Recipe

 10 lbs pork roast (pork butt roast works)
 4 medium onions
 5 shallots
 2 bell peppers
 3 bunches green onion, chopped fine
 1 bunch fresh parsley, chopped fine
 1 tsp white pepper
 2 tbsp salt
 1 1/2 tbsp black pepper
 5 tbsp cayenne
 9 3/4 cup cooked rice
 1 package of casing

I learned that if you boil boudin you can't stuff it tight. The rice will grow and burst the casing. Your recipe is the most authentic on YouTube. I'm a technician for a sausage machine company and have seen many boudin kitchens. I have also learned that when you leave Louisiana no one knows what real boudin is. Some people even make it without rice.

I really do like your recipe nothing fancy you keep everything simple and I really love! The fact that you don't put your meat in a grinder you cook that sucker down till it falls apart I like that that's the way I like to cook thank you!

Fantastic! Finally a video that shows what sausage really should be. In Slovakia, this would be called Jaternice, and we use barley instead of rice, sometimes buckwheat or a portion. One thing is to cook the grain or rice in broth from the bones and trimmings of the pig. The fresh onions at the end is a great idea, maybe some oregano or thyme also

I learned to love cajun boudin when I was at Ft Polk La. and I was dating a sister of a buddy in the Army. My buddy and I would take off the weekend go to folks place along the bayou in south Louisiana. Every weekend they had great cajun food and his mom and sister would send some smoked boudin back with us. "Laissez les bons temps rouler!"

You sir, are the man! Been cooking for over 40 years, all cuisines. Been trying to recreate then awesomeness of Cajun food/recipes while, trying to master Jamician jerk. (I lOVE good, strong flavoring.) Your video at least, but me in the "ballpark" for authentic Cajon/Creole food. A sincere thanks again!

I actually followed this recipe to a T. I used the the sausage stuffer attachment in my kitchen aid stand mixer and it came out great! My family is from lake Charles and good boudin is impossible to find where I live now. I tweaked some of the seasoning amounts for my own personal tastes and it came out fantastic. Thank you so much!

I LIVE IN THE UK BUT I WAS BORN IN LOUISIANA AND CAN ONLY REMEMBER THE WONDERFUL TASTE OF BOUDIN, TOO BAD IT ISN'T AVAILABLE IN THE REST OF THE WORLD. WELL DONE VIDEO, I NOW SEE HOW IT WAS DONE WHEN I WAS GROWING UP.

Heath I just made 26 pounds if your boudin. Best I've ever had anywhere! I used to work the oil patch down there and really loved it before I retired. Great channel man!
