Project BBQ owner Chef Rex Bernales, along with partners Rob Baker, Mo Pierce and Steve Hamlin, have been taking over Circa Las Vegas. Their food truck, spilling out onto the Fremont Street Experience, has a built-in “backyard” that makes you feel like you’re at your buddy’s house for a barbecue. Dine on delicious dishes and sip on cocktails from Circa Bar as you enjoy spectacular light shows from the Viva Vision overhead. Project BBQ uses the highest quality of meat, including Certified Angus Beef, pulled brisket, pork, chicken, and more in their different meals. Along with premium meat, the bold spices of Project BBQ boast some of the strongest flavors in the neighborhood. From their signature “$100 Sandwich” and roasted pig, to their “Garbage Bowl”, a taste of unique BBQ cuisine awaits.
